ENTREES: TEXAS BEEF AND BEAN CHILI

Enter this in any chili cook-off.

Ingredients:

  • 8 ozs extra-lean ground beef
  • 8 ozs turkey sausage
  • 1/2 medium onion, diced
  • 1 can (28 ozs) reduced-sodium stewed tomatoes (with juice)
  • 1/4 cup diced, canned green chili peppers
  • 3 cups canned pinto or kidney beans
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 2–3 tbsp chili powder
  • 1/2 tsp ground black pepper
Directions: In a large pot, cook and stir the beef, turkey sausage and onion for 8 minutes or until meat is no longer pink. Drain well. Add tomatoes, beans, peppers, oregano, cumin and 2 tablespoons chili powder; bring to a boil. Reduce heat to medium, cover and cook for 25 minutes or until chili is thick. Add pepper and more chili powder to taste. Serves 4.
