Raisin-Cheese Blintzes

RAISIN-CHEESE BLINTZES

Your friends won't believe they're homemade.

Crepe batter Ingredients:

  • 3/4 cup whole wheat flour
  • 1 cup skim milk or soy milk
  • 4 tbsp cornstarch
  • 1 banana, peeled and mashed
Filling Ingredients:
  • 1 cup low-fat cottage cheese
  • 1/4 cup raisins
  • 1/4 tsp cinnamon
Directions: Mix batter ingredients in a bowl. Pour 6 or 7 tbsp of batter into a heated, nonstick frying pan. Roll the pan around to spread the batter evenly. Cook until the top is slightly dry, then place the crepe on a napkin. When you've cooked all the crepes, heat oven to 350 degrees.

Combine filling ingredients in a bowl, then place a few tablespoons of filling in the center of each crepe. Roll them up and fold the ends to keep contents from spilling. Place blintzes on a lightly oiled baking pan and bake until golden brown (about 30 minutes).
